Bisquit Cognac은 Cognac 지방의 Fins Bois (팽 브와) 지역에 위치한 Chateau de

Lignieres (샤또 드 리니에레) 포도농장에서 재배한 포도와 Grande Champagne

(그랑드 샹파뉴), Petite Champagne (쁘띠뜨 샹파뉴) 지역의 포도를 사용하여 현대식

대형 증류기로 2회 증류합니다.

증류시에 다른 꼬냑에 비해서 천천히 가열하며, 상대적으로 낮은 알코올 도수를 유지하므로

원료인 포도의 향취를 많이 느낄 수 있습니다.

Excellence N°2 Year 1889 is one of few Vintage Tres Vieilles Grandes Champagnes: These Cognacs are sold at their natural alcoholic strength -less than 40%- after aging, and are kept in wax-sealed demijohns until being bottled for sale. Most Very Old Cognacs to be found are "flat" -they have lost their aroma and their vigor-. They are very often used to improve younger Cognac in a blend. Despite their great age, however, A. E. DOR "Tres Vieilles Grandes Champagne" have retained their vigor and personality, and really deserve to be tasted and appreciated just as they are. This is due to the fact that they where produced in that noblest of growths, the Grande Champagne area, and to the meticulous care lavished upon them from distillation to aging. 1889 Excellence 35% by vol N°2.

Limited to a few bottles only. This eau-de-vie with a rare finesse is a fruit of blending : 80% Grande Champagne and 20% Fins Bois. There is no secret. The perfection of this great cognac is in part due to half a century's ageing in oak barrels at the end of which period, in 1964, it was put into a large glass demijohns and sealed with wax after having reached the mimimun legal requirement of 40° by evaporation. Tasting reveals aromas of vine cane, mushrooms and especially its incomparable and inimitable rancio.

The family treasure limited to a few large glass demijohns discovered recently in a small cellar of o property in Grande Champagne near Lignieres Sonneville. After having reached 41° by naturel evaporation, it was put into demijohns in 1965. Its nobility, distinction, and incompromising character is revealed in the nose. Floral tones.
