스카치 위스키 (Scotch Whisky)의 정의

 

 

스카치 위스키는 1909년부터 영국의 법으로 정의되었으며, 1989년부터 EC(European Community)

법률로 반포 되었습니다.

 

스카치 위스키에 관련된 영국의 법률은 1988년 스카치 위스키 조례 (The Scotch Whisky Act 1988)와

1990년 6월 스카치 위스키 규칙 (The Scotch Whisky Orders 1990) 입니다.

 

1988년 스카치 위스키 조례에서 정한 스카치 위스키의 정의는 다음과 같습니다.

 

1. 스코틀랜드의 증류소에서 물과 발아된 보리 (여기에 다른 곡물을 통째로만 추가할 수 있음)

   로 만든 위스키로

 

1) 발아된 보리(Malted Barley)를 그 증류소 자체에서 매쉬(Mash)로 만들어야 하며,

2) 오직 발아된 보리의 속의 효소에 의해서만 발효가능 원료[맥아즙(Wort)]로 변환 시켜야 하며,

3) 효모(Yeast)만을 추가하여 발효(Fermentation) 시켜야 함

 

2. 사용된 원재료의 향과 맛을 간직 할 수 있도록 알코올 농도를 94.8% 이하로 증류한 위스키

 

3. 700 리터를 초과하지 않는 오크 통속에 넣어서, 스코틀랜드의 보세창고에서, 최소 3년 이상 숙성 시킨 위스키

 

4. 사용한 원재료와 제조방법 및 숙성으로부터 추출된 색깔, 향, 맛 등을 유지하고 있으며,  물과 캬라멜 이외의

    첨가물을 넣지 않은 위스키

 

 

또한 1988년 스카치 위스키 조례는 스코틀랜드에서는 스카치 위스키 이외의 다른 위스키의 생산을 금지함

 

1988년 스카치 위스키 조례와 ESDR (European Spirits Definition Regulation)는 EU 내에서 판매되거나

EU 외부로 수출되는 모든 스카치 위스키의 알코올 농도가 최소 40% 이상으로 명시함

What is the legal definition of Scotch Whisky?

 

 

Scotch Whisky has been defined in United Kingdom (UK) law since 1909 and recognised

in European Community legislation since 1989.

 

The current UK legislation relating specifically to Scotch Whisky is The Scotch Whisky Act 1988

and the Orders made under it, which came into effect in June 1990 and superseded that part

of the Finance Act 1969, as subsequently amended, defining Scotch Whisky.

 

For the purposes of The Scotch Whisky Act 1988 "Scotch Whisky" means whisky:

 

1. which has been produced at a distillery in Scotland from water and malted barley

   (to which only whole grains of other cereals may be added) all of which have been:

 

(i) processed at that distillery into a mash;

(ii) converted to a fermentable substrate only by endogenous enzyme systems;

(iii) fermented only by the addition of yeast;

 

2. which has been distilled at an alcoholic strength by volume of less than 94.8 per cent

   so that the distillate has an aroma and taste derived from the raw materials used in, and

   the method of, its production;

 

3. which has been matured in an excise warehouse in Scotland in oak casks of a capacity

   not exceeding 700 litres, the period of that maturation being not less than 3 years;

 

4. which retains the colour, aroma and taste derived from the raw materials used in, and

   the method of, its production and maturation, and to which no substance other than water

   and spirit caramel has been added.

 

The Scotch Whisky Act 1988 prohibits inter alia the production in Scotland of whisky other than

Scotch Whisky.

 

The Scotch Whisky Act 1988 and The European Spirits Definition Regulation both specify

a minimum alcoholic strength of 40 per cent by volume, which applies to all Scotch Whisky

bottled and/or put up for sale within or exported from the EU.
